Tomato Basil Soup

Tomato Basil Soup is a refreshing recipe to start your meal. As Tomatoes are high in the antioxidant lycopene. Tomatoes include lutein and zeaxanthin, which may help protect the eyes from blue light emitted by digital gadgets such as smartphones and laptops. Additionally, tomatoes contain Potassium, Vitamins B and E, and other minerals.

The eugenol in basil may help to lower blood pressure. The essential oils in the herb may help lower cholesterol and triglyceride levels. Basil is a good source of magnesium. Tomato Basil Soup is a refreshing recipe to start your meal.

 

Ingredients:
  • Tomatoes – 3 Medium
  • Fresh basil Leaves – 2 Tablespoon
  • Onion Chopped – 1 Medium
  • Garlic – 3 Cloves
  • Vegetable stock – 4 Cups (Optional)
  • Fresh Cream – 1 Tablespoon
  • Salt to taste
  • Pepper Powder – ¼ Teaspoon
  • Olive oil – 2 Teaspoon

 

Method:
  1. Heat oil in a large pan. Sauté garlic and onions until soft. Add the tomatoes and vegetable stock or water as required.
  2. Season with salt and freshly ground pepper. Boil the soup. Set aside to cool.
  3. Add the basil and purée the mixture in a blender and blend it into a fine smooth paste.
  4. Pour the puree into a deep pan, add water or vegetable stock to adjust the consistency of soup. Simmer over low heat for a few minutes to mix properly. Drizzle some fresh cream.
  5. Serve hot, garnished with fresh basil leaves.
