Tofu bhurji is a vegan dish that can be had with chapati or brown bread in either breakfast or lunch. It is a low carb high protein healthy side dish with various health benefits. Tofu is made from soaking soybean and extracting its milk. The milk is then curdled, pressed into a solid block and cooled to get a white, wobbly block of tofu. It is a great source of protein, an excellent source of iron, calcium, magnesium, omega 3, and vitamin B1. It is also rich in Iso-flavones, powerful antioxidant that reduce aging and other chronic disease.
Ingredients:
- Tofu – 200 gm
- Onion – 1 medium
- Tomato – 1 large
- Green Chilli – 1 finely chopped
- Ginger – ½ inch
- Cumin Seeds – ½ tsp
- Red chilli powder – ¼ tsp
- Turmeric powder – ¼ tsp
- Oil – 2 tsp
- Coriander leaves- 3-4 sprig
- Salt – as required
Method :
- First scramble the tofu and keep it aside.
- In a hot pan add oil, then cumin seeds, onion, green chilli and ginger and fry it on a medium flame.
- Add the chopped tomatoes and sauté it for 2-3 mins.
- Add turmeric and red chilli powder and mix it well.
- Lastly, add scrambled tofu and sauté for 3-4 mins. Add salt to taste and mix well.
- Serve the hot Tofu bhurji along with chapati or brown bread.
Note: You can also add tofu and vegetables in grated and chopped form respectively.
