Spinach is a nutrient-dense food. It contains a lot of nutrients while being low in calories. Spinach contains a lot of insoluble fibre. Insoluble fibre helps promote bowel health. Spinach is a nutrient-dense green vegetable. It is rich in vitamin C, carotenoids, folic acid, vitamin K, calcium and iron. Spinach includes alpha-lipoic acid, an antioxidant that has been found to reduce glucose levels, improve insulin sensitivity, and protect diabetic patients against oxidative, stress-induced alterations.
Ingredients
- Spinach – 4 Cups (Washed & Drained)
- Onion Chopped – 1 Medium 1 small or ¾ cup Onion chopped
- Tomato Chopped – 1 medium or 1 cup Tomato chopped
- Green Chilli Chopped – ¼ Teaspoon
- Ginger Chopped – ¼ Teaspoon ½ inch Ginger chopped
- Garlic Minced – 1 Teaspoon
- Milk – 1 cup
- Water – 3 cups Water
- Oil – 1 Teaspoon
- Salt & Pepper to taste
Method
- In a deep pan or kadai, combine the onion, tomato, green chilies, ginger, and garlic.
- Fill the pot halfway with water, set the stove to medium heat, and bring the water to a boil.
- Allow 10-12 minutes for it to cook after it begins to boil. The onions and tomatoes will have softened and cooked by this time.
- Add the spinach leaves after they’ve been washed.
- Allow approximately 2-3 minutes for the spinach to shrink. Allow the mixture to cool for 5-10 minutes after turning off the stove.
- Then, in a blender, make a smooth puree of it.
- In a medium-sized saucepan, heat oil. When the oil is hot, add the grated garlic and cook for a minute
- After that, add the pureed mixture, add more water if required.
- Season with salt and pepper.
- Allow for a 5-minute simmer.
- Finally, pour in the milk.
- Bring it to a boil, then remove it from the heat & serve the spinach soup
