Pumpkin and Carrot Puris | Fiber Rich | Nutritious Recipes

Pumpkin and carrot puris are great addition in the diet and a common breakfast choice for those who want to gain weight.

Pumpkins are loaded with variety of nutrients such as fiber, vitamins, minerals and antioxidants. Pumpkin contain beta carotene which is converted in to body to form vitamin A. It is important for vision and immunity. Pumpkin also contains vitamins such as C and E important antioxidants that help fight infections.

Carrots are a good source of several vitamins and minerals, especially biotin, potassium, vitamins A, K and B6. Pectin is the main soluble fiber in the carrots that helps in lowering blood sugar and cholesterol. It also helps in promoting good gut health. Carrots are a great source of many plant compounds such as carotene and lutein.

Ingredients:
  • Pumpkin Grated – ½ Cup
  • Carrot Grated – ½ Cup
  • Semolina – 1 Tbsp
  • Wheat Flour – 1 Cup
  • Jaggery – 3 Tbsp grated
  • Nutmeg – ¼ to ½  tsp
  • Salt to taste
  • Oil to deep fry
  • Ghee – 1 Teaspoon
Method:
  1. Heat a teaspoon of ghee in a pan. Add grated pumpkin, carrot and jaggery to the pan and cook it on a low flame.
  2. Cook till the vegetables become soft and the water evaporates. Take it off the heat and let it cool.
  3. Heat oil for deep frying in a frying pan.
  4. Take a big bowl add the above mixture to it, then add wheat flour, semolina, and nutmeg and make a firm dough. Use some water if required.
  5. Roll out small puris from the above dough and deep fry them till golden brown.
  6. Serve hot.
