Oats are one of the healthiest grains. They are known for their high content of β-Glucan, a soluble fiber that helps in reducing LDL cholesterol in the blood. Being high in fiber, it has a low glycemic index and may help in managing the blood sugar levels. The grain is gluten-free and therefore can be well suited for people who cannot tolerate gluten. Oats are most commonly consumed in the form of porridge with milk, but this savory recipe is as easy and can be consumed by those who are lactose intolerant as well.
Ingredients:
Instant Oats – 3 Tablespoons
Chopped Onion – 1 Small
Grated Ginger – 1 Teaspoon
Chopped Carrot – ½ Carrot or 1 Small
Chopped Tomato – 1 Small
Green Peas – ½ Katori
Urad Dal – 1 Teaspoon
Mustard Seeds – ½ Teaspoon
Cumin Seeds – ½ Teaspoon
Curry Leaves – 4 to 5 in no.
Finely Chopped Green Chilli – 2 in no
Turmeric – ¼ Teaspoon
Oil – 1 Teaspoon
Salt – As per taste
Coriander – For garnishing
Method:
- Heat a teaspoon of oil in a large pan, add mustard seeds and let them splutter. Add cumin, urad dal, and curry leaves.
- Add ginger, green chili, onion, and sauté well.
- Now add all the vegetables, turmeric, salt as per taste and mix well. Add little water and wait for it to simmer.
- Further, add ½ cup water and get the mixture to boil. Once the water comes to a boil, add instant oats and mix well.
- Cover the pan for 5 minutes till the oats get cooked well. Once the water is absorbed, switch off the flame.
- You can add lemon juice to enhance the taste further.
- Garnish with fresh coriander leaves and serve hot.
