Mix Vegetable Soup

Mix Vegetable Soup is delicious and fat free vegetable soup. It is prepared using low-carb vegetables that keep you full and also lift up your mood. Carrots, are packed with healthy fiber, beta carotene, and lycopene, lutein that improves eye health and helps in weight loss. Capsicum, has good amount of Vitamin C and protects against infection by encouraging production of white blood cells. Cauliflower is high in fiber and prevents constipation, and helps maintain a healthy digestive tract.

Ingredients:
  • Onion – 1 small, diced
  • Carrot peeled and sliced – ¼ Cup
  • Capsicum Diced – ½
  • Tomato Chopped – 1 Small
  • Cauliflower – a few florets
  • Oats flour – 1 teaspoon
  • Garlic – 2 to 3 cloves minced
  • Black pepper powder – ¼ tsp
  • Bay leaves – 1
  • Coriander Chopped – 1 Teaspoon
  • Salt – to taste
Method:
  1. Place all the vegetables such onions, tomatoes, carrots, capsicum, water, black pepper, garlic, bay leave and salt into a large pot, add water 2 cups and bring it to boil
  2. Add 1 tsp of oats flour into it and mix properly
  3. Allow it to cook for 7 to 10 minutes until carrots are tender and vegetables are cooked
  4. Then add cauliflower florets and cook for a few more minutes on a slow flame
  5. Once cooked properly, discard the bay leaf
  6. Take it in a bowl and garnish with coriander leaves.

Serve hot & enjoy
