Bhagar is also called as Sama ke chawal or Variche tandul. This is traditional Maharashtrian dish usually made during Vrat (Fasting days). Traditionally served with Peanut Amti but you can also have it with plain curd or cucumber raita.
This wholesome grain has low calories and a low glycemic index, a good option for diabetes. As it is rich in fiber it’s helpful for cardiovascular disease patients and good for digestive health as well. It is good option for weight loss.
Ingredients:
- Vari Rice / Bhagar – 1 Cup
- Cumin Seeds – 1 Tsp
- Green Chilies – 2 nos
- Curry Leave – 1 Twig
- Peanut (Crushed) – 1-2 Tsp
- Salt – To taste
- Coriander Leaves – 2 Tbsp
- Ghee – 1-2 Tsp
- Water – As Required
Method:
- Rinse the vari rice / bhagar under running water and set aside.
- In a pan over medium heat, melt the ghee. Brown the cumin seeds and crushed peanuts in a pan.
- Stir in the slit green chilies and curry leaves.
- Add the rinsed vari rice / bhagar and sauté for a minute. Mix in the salt and water.
- Everything should be properly mixed. Reduce the heat to low and cover the pan with a lid.
- Allow it to finish cooking on a low heat. It will take 20-30 minutes to completely cook.
- Turn off the heat and stir gently it once it’s soft and cooked.
- Cover and set aside for 5 minutes. Finally, garnish with coriander leaves and serve hot.
