Horsegram soup is made from highly nutritious horsegram legume. Horsegram is high in fibre and protein & helps you stay satiated. It can be had as appetiser or a meal by itself, especially for those who want to eat healthy and light. It has anti-inflammatory properties. It has good antioxidant content which helps boost immune system. The fibre in horsegram aids digestion, prevents constipation.
Ingredients:
- Raw Whole Horse Gram / Kollu / Kulith – ½ cup
- Water – 3 cups approximately
- Oil – 1 tsp
- Mustard Seeds – ½ tsp
- Urad dal – ½ tsp
- Asafoetida / Hing – a pinch
- Turmeric Powder – ½ tsp
- Cumin Seeds – 1 tsp
- Curry leaves – 2 sprig
- Tamarind Pulp – 1 to 2 Tbsp
- Salt to taste
- Black Pepper powder – ¼ tsp
- Coriander leaves a handful finely chopped
Method:
- Dry roast horsegram in pan and pressure cook for 8-10 whistles
- Drain the water once cool & keep the water aside and finely blenderise it to form a smooth puree.
- Heat oil in a pan, add mustard, cumin, urad dal, hing , curry leaves, and let it splutter.
- Add turmeric and add horsegram water, horsegram puree, mix well and bring it to boil.
- Add in tamarind pulp, pepper powder & salt as per taste.
- Simmer for few minutes, garnish with coriander leaves and serve hot.
