Waffle can be made in various ways. It can be sweet as well as savoury delicacy that can be enjoyed. This recipe of Waffle Egg Sandwich is loaded with the goodness of calcium from ragi, high fiber from oats, protein from egg. It is a complete meal in itself as it is balanced with carbohydrates, proteins, fibre and minerals. This recipe can also be enjoyed by those who are intolerant to gluten as it is gluten free.
This savoury waffle recipe can be relished by both kids as well as adults. It need not be just a snack but also your meal.
Ingredients:
For Waffle:
- Whole Egg – 1 No.
- Milk – ½ Cup
- Virgin Olive Oil – 2 Tbsp
- Baking Powder – ½ Tsp
- Salt – for Taste
- Vanilla Extract – ¼ tsp
- Ragi Flour (Finger Millet) – ¼ Cup
- Oats Flour – ½ Cup
For Filling:
- Curd (For Hung Curd) – 1 Cup
- Salt – to Taste
- Black Pepper Powder – 1 Tsp
- Cucumber (Chopped) – 1/2
- Coriander – Finely Chopped
- Hard-Boiled Egg (Chopped) – 2
- Note- You can replace the Egg with Paneer/ Tofu/ Chicken as per your preferences.
Method:
For Waffle:
- Preheat the waffle maker.
- In large bowl, Beat the eggs until they become fluffy.
- While continuing to beat, add milk, oil, baking powder, salt and vanilla to it until it all becomes smooth.
- Now add in the oats and ragi flour and stir well, until smooth and there are no lumps left.
- Now, lightly grease the waffle pan with oil.
- Pour the waffle dough onto the pre-heated waffle pan.
- Cook until they turn golden brown and then remove from the pan.
For Filling:
- Wrap a Muslin cloth over a strainer and place it inside a container.
- Pour the curd into the strainer and let it drain the water for 15 – 20 mins. Your hung curd is ready.
- Take the hung curd into a large bowl and whisk it lightly, adding salt and pepper as per taste.
- Add the chopped eggs, cucumber and coriander with the hung curd mixture and mix lightly.
- Fill in 2 tbsp of egg-cucumber-hung curd mixture in between the waffles.
- Healthy Waffle Sandwich is ready!
