Carrots are a winter crop, hence they are best consumed throughout the winter. Gajar halwa is the most popular Indian sweet dish made from carrots. They are high in antioxidants, Vitamin A, and fibre. Contain beta-carotene, a storage form of vitamin A that is good for the vision. Vitamin A strengthens the immune system. When halwa is made with milk, it increases calcium and protein. Nuts added to the halwa contain essential fatty acids and fat in the form of ghee used in the recipe, helps to keep skin moisturised during the winter.
Gajar Halwa is a calorically dense recipe and hence to be enjoyed in moderation and with regular exercise being a part of lifestyle.
Ingredients
- Carrot (Grated) – 2 Cups
- Low-Fat Milk – 1 Cup
- Sugar – 2 Tablespoon
- Cardamom Powder – ½ Teaspoon
- Ghee – 1 Teaspoon
- Almonds (Chopped) – 2 Tablespoon
Method
- Melt 1 teaspoon of ghee in a medium-sized saucepan.
- Add grated carrots, and cook for 8-10 minutes, stir occasionally.
- Wait till the colour of grated carrots changes to dark orange colour.
- Add milk and sugar to it.
- Continue stirring over medium flame until the milk dries up completely, and till the carrots turn soft.
- Turn off the heat, add cardamom powder and sliced almonds.
- Gajar Halwa is ready to be relished.
