Tomato Salad | High Fiber | Easy to prepare Recipe

Salad is a best complimentary dish for every meal. Tomatoes are high in the antioxidant lycopene. Lycopene is an antioxidant that fights free radicals that can harm your cells and impair your immune system. Tomatoes include lutein and zeaxanthin, which may help protect your eyes from blue light emitted by digital gadgets such as smartphones and laptops. Additionally, tomatoes contain Potassium, B vitamins and vitamin E, and other minerals. Curd is a natural probiotic that can benefit the immune system when consumed. Probiotics help the gut flora thrive, which improves gut health.

 

Ingredients:

Salad

  • Sliced Tomatoes – 2 Medium
  • Sliced Onions – ½ Medium
  • Garam Masala – 1 pinch

Raita Mint Dressing:

  • Curd – ½ Cup
  • Mint Leaves – 1 Cup
  • Lemon Juice – 1 Tablespoon
  • Salt – To Taste
  • Water – 1 Tablespoon

 

Method:

  • In a blender, mix the ingredients and blend until they form a smooth paste.
  • To get a pourable consistency, add more water.
  • Place the tomatoes in a mixing dish. Season with a pinch of salt, toss with your hands and set aside for 10 minutes.
  • Drain the tomatoes and set them aside. In a serving bowl, combine with the onion.
  • Toss the tomato salad with the dressing.
  • If preferred, top with a pinch of garam masala.
