Dal Soup

Red lentil or masoor dal is an excellent source of vital nutrients like plant protein, iron, fibre, and minerals. It is a good source of potassium, which plays a role of a vasodilator and helps to manage blood pressure. Besides these, it has notable amounts of vitamin C, vitamin B6, riboflavin, folic acid, calcium, zinc, and magnesium.

Masoor dal is highly flavoured and delicious and can be made into several dishes like masoor dal khichadi, dal makhani, masoor dal soup, and masoor dal paratha. Dal Soup can be a part of your low carb meal, ensuring good protein and low-calorie.

 

Ingredients:                                                                                                        
  • Masoor Dal (washed & drained) – ½ Cup
  • Onion Chopped – 1 small
  • Carrot Diced – 1 small
  • Mint Leaves – A few
  • Chilli Flakes – ½ Teaspoon
  • Turmeric – a pinch
  • Salt to taste

 

Method:
  1. Heat a non-stick pan, add mint leaves to it and dry roast them on a slow flame. Keep aside.
  2. Combine masoor dal, onion, carrot, turmeric powder and 2 cups of water in a pressure cooker and pressure cook it for 2 whistles.
  3. Cool slightly and blend it into smooth mixture.
  4. Transfer the mixture into a deep non-stick pan, add the roasted mint leaves, chilli flakes, salt, and water as required.
  5. Cook on a medium flame for 3-4 minutes, while stirring occasionally till it reaches the expected soup consistency.

Serve hot.
