In the heat of summer, working on the stove is not something that everyone enjoys, and hot meals is not always a priority. So, chilled soup comes to the rescue. Cold cucumber soup is a delightful summer soup with curd and delicious flavours of fresh herbs. Also, it’s quite simple to prepare, requiring no more than 10 minutes.
Cucumbers are one of the healthiest vegetables, cleansing the body both inside and externally. They help to keep the body hydrated and nourished by eliminating toxins. Cucumber’s high water content acts as a bodily cleanser, helping to remove waste materials from the body. Cucumber is a storehouse of potassium and vitamin E that works wonders for skin.
Ingredients:
- Cucumber (Sliced): 1 Medium Size
- Curd – ¼ Cup
- Pepper Powder – 1 Tsp
- Salt – As Per Taste
- Water – As Require
- Mint Leaves – 4-5 Leaves
- Red Chili Flakes – As Per Taste
- Chopped Ginger & Chilies – 1 Tsp
Method:
- In a blender, add sliced cucumber, mint leaves, curd, chopped ginger and chilli.
- Add some pepper powder along with salt and blend it together.
- Now add little water to adjust the consistency and make a smooth paste.
- Pour that mixture in a big bowl & refrigerate for a few hours.
- Garnish with cucumber slices, mint leaves, chili flakes and serve cold.
