Chicken Vegetable Stir Fry | High Protein, Low Carbs Recipe

Chicken is a rich source of protein and helps build muscles. It is also rich in vitamin B6, niacin, selenium, and phosphorus. Skinless chicken is also low in fat and has no carbohydrates. Calcium and phosphorus present in chicken helps, keep bones healthy. It also contains tryptophan which indirectly helps to reduce stress.

Chicken vegetable stir fry is a combination of protein and fiber, and you can enjoy it with bread, roti, rice, or on its own if you are looking for low carb recipe. 

 

 Ingredients:

Diced Chicken Breast – 100 grams

Diced Onion – ½ Medium

Chopped Tomato – ½ Medium

Diced Capsicum – ½ Medium

Curd – 2 Tbsp

Ginger Garlic Paste – ½ Teaspoon

Chopped Green Chilli – 1

Coriander Powder – ½ Teaspoon

Cumin Powder – ½ Teaspoon

Turmeric Powder – ½ Teaspoon

Red Chilli Powder – ½ Teaspoon

Salt – As Per Taste

Coriander Leaves – For Garnish

Oil – 2 Teaspoon

 

Method:

  • Marinate chicken with curd, ginger garlic paste, red chili powder, coriander powder, cumin powder, turmeric powder, and salt and keep it aside for 15 – 20 mins
  • Take a non-stick pan, add oil to it and let it heat, now add chopped green chilies to it and sauté
  • Now add chopped tomatoes & cook it well, add the marinated chicken to it, and stir fry it on a medium flame till done.
  • Add the diced onions and capsicum to the above mixture, toss it well, and cover it for 5 to 10 minutes.
  • Garnish with coriander and serve
