Chicken vegetable stir fry is a combination of protein and fiber, and you can enjoy it with bread, roti, rice, or on its own if you are looking for low carb recipe.
Ingredients:
Diced Chicken Breast – 100 grams
Diced Onion – ½ Medium
Chopped Tomato – ½ Medium
Diced Capsicum – ½ Medium
Curd – 2 Tbsp
Ginger Garlic Paste – ½ Teaspoon
Chopped Green Chilli – 1
Coriander Powder – ½ Teaspoon
Cumin Powder – ½ Teaspoon
Turmeric Powder – ½ Teaspoon
Red Chilli Powder – ½ Teaspoon
Salt – As Per Taste
Coriander Leaves – For Garnish
Oil – 2 Teaspoon
Method:
- Marinate chicken with curd, ginger garlic paste, red chili powder, coriander powder, cumin powder, turmeric powder, and salt and keep it aside for 15 – 20 mins
- Take a non-stick pan, add oil to it and let it heat, now add chopped green chilies to it and sauté
- Now add chopped tomatoes & cook it well, add the marinated chicken to it, and stir fry it on a medium flame till done.
- Add the diced onions and capsicum to the above mixture, toss it well, and cover it for 5 to 10 minutes.
- Garnish with coriander and serve
