Cauliflower is a nutritious cruciferous vegetable. And so, eating cauliflower rice isn’t just low-carb but also healthy. It’s light, low-carb, nutritious, gluten-free, refined sugar-free, and easy. Cruciferous vegetables contain compounds called isothiocyanates tiny molecules with promising anti-cancer effects. Also, chopping up cruciferous veggies increases the amount of sulforaphane, a potent anti-cancer isothiocyanate, in the plant. Cauliflower rice is also a good source of vitamin C (important for immunity and skin health) and potassium (important for bone health and blood pressure).
Cauliflower fried rice is a low-carb recipe which is most preferred when on a low carb diet or a keto diet. It is easy to prepare, healthy, and tasty.
Ingredients:
- Grated Cauliflower – 1 cup
- Diced Capsicum – ½ cup
- Crushed Garlic – 1 tsp
- Grated Ginger – 1 tsp
- Soy Sauce – 1 tsp
- Chilli Sauce – 1 tsp
- Salt to taste
- Oil – 2 tbsp
Method:
- In a large heavy skillet or wok, heat oil over medium-high heat.
- Add riced cauliflower.
- Cook, stirring occasionally, until it begin to soften.
- Add ginger, garlic and capsicum and stir in till the vegetables are tender.
- Add soy sauce, chilli sauce, and salt to taste and mix well.
Serve hot.
Note: You can also make the recipe by adding egg, paneer, tofu, and chicken to improve the protein content.
