Soups are known to be comfort foods and are preferred during cold seasons. They are rich source of fiber and are packed with a lot of nutrients. Carrot is a great source of beta carotene, an antioxidant that gets converted into Vitamin A that promotes good immune function.
Ginger contains active ingredient gingerol which possess anti-inflammatory and antioxidant properties. It also helps aid digestion. Overall carrot ginger soup is not only delicious and tasty but a nutritional powerhouse.
Ingredients:
- Chopped Carrot – 1 Cup
- Chopped Onion – 1 Small
- Ginger – 2 tsp
- Mixed Herbs – ½ teaspoon
- Pepper – ½ teaspoon
- Oil – 1 teaspoon
- Salt – as per taste
- Coriander / Mint for garnishing
Method:
- Heat a teaspoon of oil in a pressure cooker and sauté onion, chopped carrot and ginger till onion turns soft and translucent.
- Now add water and salt to taste.
- Close the lid and pressure cook for 2-3 whistles.
- Allow the ingredients in the pressure cooker to cool down a little.
- Transfer them to a blender and blend it until smooth in texture.
- Heat a pan, pour the blended soup mixture in the pan, and add water to adjust the consistency.
- Season the soup with mixed herbs, and pepper powder and stir well.
- Garnish with coriander and serve hot.
