Sweet Potato Wedges are a rich source of fibre both soluble & insoluble, vitamins like vitamin A, C, B6, and minerals like potassium, copper & manganese. It is also a good source of carbohydrates. They are also rich in antioxidants that protect the body from free radical damage. The fibre and antioxidants that sweet potatoes contain promote the growth of good gut bacteria and contribute to healthy gut.
Ingredients:
- Sweet Potato – 1 big
- Pepper powder – ¼ tsp
- Chilli flakes – ¼ tsp
- Oregano – ¼ tsp
- Garlic Powder – ¼ tsp
- Salt to taste
- Oil – 1 tsp
Note: You can also make the recipe using potato or yam (suran).
Method:
- In a wide bowl take oil, to it add the pepper powder, oregano, chilli flakes, garlic powder, and salt and mix well.
- Now add the sweet potato cut into wedges to the bowl and mix properly till coated with the prepared seasoning.
- Pre-heat the oven at 200 degree Celsius.
- Transfer the sweet potato wedges onto a baking tray lined with parchment paper and spread them around.
- Bake for 20 minutes or until cooked through.
- Garnish with lemon & serve with hung curd mint dip.
