Masala Couscous Pulao is a delightful fusion dish that combines the aromatic spices of Indian cuisine

Ingredients
- Couscous – ½ Cup
- Onion – ½ thinly sliced
- Carrot – ½ finely chopped
- Green peas – ¼ cup
- Oil – 2 Tsp
- Ginger garlic paste – ½ tsp
- Red chilli powder – ¼ tsp
- Garam masala – ¼ tsp
- Bay leaf – 1
- Clove – 1-2 no.
- Cinnamon – ½ inch stick
- Mint – few
- Coriander – few chopped for garnishing
- Salt to taste
Method
- Heat oil in a heavy bottomed pan. Add cinnamon stick, cloves, bay leaf and saute for a few seconds.
- Add sliced onions and cook until they become soft and transparent.
- Add ginger garlic paste and saute for 2 minutes.
- Add vegetables, red chili powder, coriander powder, garam masala powder, salt and saute for 5 minutes more.
- Add 1 cup of water and allow the mixture to boil. One the water starts boiling, add mint leaves and couscous.
- Simmer the flame and cook until the water is completely absorbed. If couscous is not yet cooked, add ¼ cup of hot water.
- Garnish with chopped coriander and it is ready to be served.
