Refreshing Summer Salad | Fiber Rich | Nutritious Recipe

This nutritious summer salad a must try recipe. Summer is the season where everyone tries to keep the body hydrated. So summer is the best time to consume raw salads. This green salad is full of antioxidants, fibre rich, gut friendly which aids in digestion.

Cucumbers and summer are correlated, rightly called as hydrating vegetables as they are mostly composed of water. It is rich in phytonutrients and vitamins C. Lettuce is an excellent source of vitamin A which is needed for healthy eyes & skin. Spinach is a nutritional powerhouse that offers variety of nutrients. It is a rich source of Vitamin A, C & K, and Iron. Broccoli helps in maintaining blood pressure thereby aiding in cardiac health.

Ingredients:
  • Baby Spinach – a few leaves
  • Cucumber Chopped – 1 Small
  • Shredded Iceberg Lettuce – ½ Cup
  • Green Capsicum Chopped – ½
  • Cherry Tomatoes Chopped – 4-5
  • Roasted Flaxseeds – 1 Teaspoon
  • Roasted Pumpkin Seeds – 1 Teaspoon
  • Salt and Black Pepper as per taste

For Dressing:

  • Thick Curd / Yoghurt – ½ Cup
  • 1-2 Cloves Garlic Crushed
  • 2 Tbsp finely chopped Mint
  • 1 Tbsp finely chopped Parsley
Method:
  1. Mix together the yoghurt, garlic and herbs
  2. Arrange all the vegetables, seeds, salt and pepper in a bowl and gently mix in with the dressing.
  3. Chill for 1 hour before serving.

NOTE: You can use wooden bowl of salad as flavours of dressing thus seep gradually into wood.
