Coriander is a wonderful source of dietary fiber, manganese, iron and magnesium as well. It helps in lowering blood cholesterol levels and management of high blood sugar. Vitamin K found in coriander helps in fighting or preventing Alzheimer’s disease.
Ingredients:
- Lemon Juice – 1 Tablespoon
- Coriander Leaves, chopped – ¼ Cup
- Onion, chopped – 1 Small
- Carrot, chopped – ½ Small
- Cabbage, grated – ¼ Cup
- Garlic, grated – 2 Teaspoon
- Green Chilly, chopped – 1-2 no.
- Salt – as required
- Oil – 1 Teaspoon
Method:
- Heat oil in a deep pan, to it add garlic, green chilly & sauté for a few minutes.
- Add onions & sauté. Then add cabbage, carrots & sauté.
- Add 3 cups of water, and bring it to a boil.
- Cook all the vegetables until the rawness goes away but are crunchy enough.
- Add coriander and lemon juice.
- Ready to serve.
